Cantele Teresa Manara Chardonnay VT

Cantele's Teresa Manara Chardonnay Vendemmia Tardiva (VT) is an exquisite late-harvest wine from Salento, Italy, showcasing the richness and complexity achievable through extended ripening. 

It's a soft white that rides on refreshing acidity. Thirst-quenching yet full-bodied and confident, it reveals flavors of yellow peach, acacia honey, raw almonds, and hazelnut. The finish delivers an intensely salty, passionate Mediterranean flourish. 

The late-harvest Chardonnay grapes are hand-picked in early September, allowing for optimal ripeness and phenolic development. Post-harvest, the grapes undergo gentle pressing to preserve the integrity of the must, followed by fermentation initiated in stainless steel tanks and completed in barriques. The wine then matures on its lees in French oak barriques—50% new and 50% second passage—for approximately 12 months, enhancing its complexity and depth

This versatile wine pairs excellently with fish dishes, vegetables, white meats, and cheeses. It is particularly delightful when accompanied by lightly fried foods, especially mushrooms.
